Steak and Eggs

This could be a breakfast option, could be a brunch option or even carry all the way until lunch - whenever you decide to make it and eat it, it’ll taste incredible.

Ingredients:

  1. Sirloin Steak - Ideally with the fat trimmed, 160g

  2. 2 x Medium Eggs - ideally free range (but we like Tesco Finest Mixed Size Blue Eggs, they taste absolutely incredible) but any eggs are ok

  3. 2 x slices Roberts Bakery - Seriously Seeded - Digestion Boost - Bread

  4. Butter - we like real butter so our choice is Longely Farm Luxury Jersey Butter

  5. Olive Oil - regular will do fine to cook the steak.

  6. Pink Himalayan Salt and Black Pepper - seasoning of course.

  7. Watercress, Spinach and Rocket Salad - for greens, vitamins and minerals.

Method

How to cook the, Steak:

  1. Let the steak sit at room temperature for 60-90 minutes.

  2. Season the steak with salt and pepper.

  3. Add a tbsp of olive oil to a pan, heat until pan is hot.

  4. Add steak and leave until cooked 1/3 way through, the flip and cook other side to the same.

  5. Remove from pan, leave to rest for 2 minutes - take pan off heat.

  6. Slice steak up into thin slices, put the pan back on the heat until hot, drop steak in to flash fry for 15-30 secs max.

  7. Remove steak from pan, leave to rest for 3-5 minutes.

How to cook the eggs:

  1. Get a pan, fill with boiling water.

  2. Add malt vinegar the pan (1-2 tbsp) this will stop your egg from separating.

  3. Carefully crack two eggs into pan, then wait 3-4 minutes until the egg white is cooked.

How to make perfect toast:

  1. Put in the toaster at optimal setting for your preference.

  2. Once toasted, add the incredible Jersey Butter.

How to make the garnish:

  1. Wash a small amount of salad, season with salt and pepper.

Bring it all together:

  1. Lay the toast down on a large plate, apply steak first 1/2 on each piece of toast.

  2. Add garnish of salad to other half of the toast.

  3. Lay poached egg on top.

  4. Season with salt and pepper.

  5. Enjoy this incredible meal made in under 10 minutes.
